Bring the broccoli and broth to a boil, simmer for 5 minutes. Add cheese cubes and heat on a low flame until the cheese melts. Add salt and pepper to taste. If the soup is too thick, add heavy cream to thin to desired consistency.
Why broccoli is good for you
Researchers have found that eating steamed broccoli reduces the risk of a heart attack by boosting the body’s ability to fight cell damage. Broccoli contains as much calcium as a glass of milk. It’s also a good source of iron (required for normal blood formation and oxygen transport around the body) and fiber. Did you know broccoli contains more vitamin C than an orange? Vitamin C is great for your hair, skin and teeth and helps fight infections. People watching their weight generally include it in their daily diet because it makes you feel full. One serving of broccoli gives you healthy levels of magnesium, selenium, tassium, beta-carotene and zinc.
