Ingredients
– 500 g mutton (washed and cut into pieces), 2 medium onions (finely chopped), 2 tomatoes (pureed or finely chopped), 1 tablespoon ginger-garlic paste, 3 tablespoons oil or ghee, 1 teaspoon turmeric powder, 1½ teaspoons red chilli powder, 1 teaspoon coriander powder, ½ teaspoon cumin powder, 1 teaspoon garam masala, Salt to taste, 2 cups water (adjust as needed), Fresh coriander leaves for garnish, 1 bay leaf, 1 cinnamon stick, 3-4 cloves, 3-4 green cardamoms
Method
– Heat the oil in a pressure cooker or deep pan. Add bay leaf, cinnamon, cloves, and cardamoms. Sauté for a few seconds until fragrant.
– Add chopped onions and cook until they turn golden brown. Add ginger-garlic paste and sauté for about a minute until the raw smell disappears.
– Add tomatoes and cook until the mixture softens and oil begins to separate.
– Add the spices-turmeric, red chilli powder, coriander powder, cumin powder, and salt. Mix well.
– Add the mutton pieces and sauté for 5-7 minutes so that the meat absorbs the spices.
– Add water, mix well, and cover the cooker. Cook for about 4-5 whistles or until the mutton becomes tender. (If using a pan, cook on low heat for 40-50 minutes.)
– Once done, sprinkle garam masala and simmer for a few minutes.
– Garnish with fresh coriander leaves and serve hot.
