Ingredients
– 1 cup Soya chunks, 2 medium onions (finely chopped), 2 tomatoes (pureed), 2-3 green chilies (chopped), 1 tbsp ginger-garlic paste, 2 tbsp Mustard oil, 1 tsp cumin seeds, 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp coriander powder, ½ tsp garam masala, 1 tsp amchur (dry mango powder), Salt to taste, Fresh coriander leaves for garnish.
Method
– Boil the soya chunks in salted water for 5-7 minutes until soft. Drain and rinse with cold water. Squeeze out excess water and keep aside.
– Heat mustard oil in a pan until it reaches smoking point (to remove raw smell), then let it cool slightly. Add cumin seeds and let them splutter.
– Add chopped onions and sauté until golden brown. Mix in ginger-garlic paste and green chilies, cooking until aromatic.
– Pour in tomato puree and cook until oil separates. Add turmeric, red chili powder, coriander powder, salt, and mix well. Cook the masala until thick and rich.
– Add the prepared soya chunks and mix thoroughly with the masala. Add a little water if needed and let it simmer for 8-10 minutes so the flavors absorb well.
– Sprinkle garam masala and amchur powder. Mix well and garnish with fresh coriander leaves.
